Hot chocolate #1 - wheat free recipe

Buying hot chocolate mixes is always a problem on a wheat or gluten free diet as most of them contain wheat. And unless you know that the hot chocolate is being made from scratch and pure ingredients in a coffee shop again it's a bit of a risk. So what do chocoholics that follow a wheat or gluten free diet do? Well they make their own.

This really must be the quickest and easiest hot chocolates to make from basic ingredients. If you simply want the hot chocolate then you can forgoe adding the whipped cream and nutmeg, because it's just as good without the extras.

The frothier you can get the milk the more luxurious the texture. Just two simple ingredients are all you need to create a little bit of hot chocolate luxury.

serves 1

40 g semi-sweet chocolate, finely chopped or grated
300 ml milk
- whipped cream (optional)
- nutmeg, grated (optional)

1. Place chocolate in a medium bowl.
2. Put milk into a small saucepan and bring to the boil.
3. Pour one quarter of the boiling milk onto the chocolate, then whisk the chocolate and milk until the chocolate has melted and combined well with the milk.
4. Return the remaining three quarters of the milk to the heat and bring back to the boil.
5. Pour the remaining boiling milk over the chocolate milk whisking continously. You are aiming to get a frothy texture to the hot chocolate. Alternatively you can use one of those small battery powered whisks to do the same task.
6. Pour into a warmed mug and drink immediately or alternatively top with a generous spoonful of the optional whipped cream and a fine sprinkle of grated nutmeg before drinking.

We like this recipe because it's so easy to make, and avoids all those horrible preservatives and chemicals that bought hot chocolate drink mixes usually contain.
