Tuna pasta bake - wheat free recipe

tuna, canned in brine, drained |

sweetcorn kernels, canned |

can chopped tomatoes |

garlic, crushed (or garlic puree) |

dried mixed herbs |

low fat natural yogurt |

milk (any type including rice, soya, goats) |

black pepper, freshly ground |

cheese, grated |

wheat free, gluten free or rice pasta, amount to suit appetites |
preheat oven: 200°C, 400°F, Gas 6

Cook the pasta and drain well. |

In a separate saucepan put the tomatoes, tomato puree, garlic, herbs and tabasco, bring to
the boil then simmer for 10 minutes. Allow to cool slightly or when adding the yogurt it will curdle.

Add the yogurt, milk and sweetcorn to the tomato mixture and mix well. |

Put the tuna in with the pasta and mix to distribute the tuna evenly. Then tip the tomato
mixture on top and stir thoroughly but gently so you don't mash up the pasta.

Tip the mixture into an ovenproof dish and top with grated cheese. |

Cook in the oven for 30-35 minutes, until the top is golden and the mixture is bubbling. |

Serve on its own or accompanied by a green salad or steamed veggies. |
