Smoked salmon breakfast - wheat free recipe

| 150 | g | smoked salmon |
| 4 | med. | eggs, beaten |
| 2 | tbsp | milk |
| 15 | g | margerine, low fat spread or butter |
| ½ | tsp | dried mixed herbs |
| freshly ground black pepper |
| oatcakes (optional - leave out for gluten free) |
| 1. | Scramble the eggs, milk, fat and herbs either in a saucepan or the microwave, season well. |
| 2. | Place the smoked salmon strips on plates and nestle the scrambled eggs up to it, adding a dash of freshly ground pepper on the top. |
| 3. | Add a 2-3 oatcakes to the side of the plate and serve immediately. |
