Smoked salmon breakfast - wheat free recipe

150 g smoked salmon
4 med. eggs, beaten
2 tbsp milk
15 g margerine, low fat spread or butter
½ tsp dried mixed herbs
freshly ground black pepper

oatcakes (optional - leave out for gluten free)

1. Scramble the eggs, milk, fat and herbs either in a saucepan or the microwave, season well.
2. Place the smoked salmon strips on plates and nestle the scrambled eggs up to it, adding a dash of freshly ground pepper on the top.
3. Add a 2-3 oatcakes to the side of the plate and serve immediately.
