Date cookies - wheat free recipe

Wheat free Date cookies

makes 16 - 20

50 g porridge oats
75 g rice flour
75 g low-fat spread, margarine or butter
½ tsp bicarbonate of soda
1 tsp almond extract
2 med. eggs, beaten
250 g fresh dates, chopped (50% dried dates can be used)
100 g chopped mixed nuts
100 g raisins

preheat oven: 180°C, 350°F, Gas 4

1. Mix the oats, rice flour, bicarb of soda and fat together until it resembles lumpy breadcrumbs.
2. Add the almond extract, nuts, raisins and dates and mix well.
3. Add the eggs and make sure the mixture is well combined.
4. Put dessert spoonfuls of the mixture onto a baking tray lined with baking parchment, then flatten each cookie gently with a fork.
5. Bake in the centre of the oven for 15 minutes. When cooked remove immediately from the baking tray (otherwise they will go soft underneath) and cool on a wire rack.
As an alternative dried chopped apricots can be substituted for the raisins, or chocolate chips, or both. Dried cranberries also make a nice change to the flavour.
