preheat oven: 180°C, 350°F, Gas 4

Mix the oats, rice flour, bicarb of soda and fat together until it resembles lumpy breadcrumbs. |

Add the almond extract, nuts, raisins and dates and mix well. |

Add the eggs and make sure the mixture is well combined. |

Put dessert spoonfuls of the mixture onto a baking tray lined with baking parchment, then
flatten each cookie gently with a fork.

Bake in the centre of the oven for 15 minutes. When cooked remove immediately from the baking
tray (otherwise they will go soft underneath) and cool on a wire rack.

As an alternative dried chopped apricots can be substituted for the raisins, or chocolate
chips, or both. Dried cranberries also make a nice change to the flavour.
